HACCP in hospitality: requirements, records and how to prove them
HACCP is not a manual sitting in a folder: it is a system of checks that must be executed, recorded and provable at any time.
What it requires in practice
Food safety plan
Every food business operator must identify process hazards, critical control points, limits and check frequencies. It is the base document, written for the specific site.
Records of checks
Fridge temperatures, blast chilling, cooking, goods-in, cleaning and sanitising must be recorded with date, time and responsible person. A record without author and moment is weak evidence.
Corrective actions
When a limit is exceeded you need proof of what was done: product discarded, temperature restored, technical intervention. The non-conformity must be closed, not just noted.
Staff training
Anyone handling food must be adequately trained and the training must be documented, including seasonal joiners.
Traceability
You must be able to trace batches and suppliers of the products in use, for recalls and complaints.
