Tablet in the kitchen: how to actually replace the paper HACCP log

Going digital changes nothing if the routine stays the same: temperatures written from memory at the end of the day, only on an electronic form. What makes the difference is where the record is taken.

Placement is half the job

• The tablet belongs where the checks happen, not in the office: next to the fridges and the goods-in area.
• It needs fixed power: a flat device is an empty log.
• It should stay awake during service, with open tasks visible without unlocking.

What makes a record defensible

1. An identified author: badge or PIN at the moment of the reading, not a shared generic account.
2. A system timestamp, not one typed by hand.
3. Photo evidence whenever a value falls outside the limits.
4. A corrective action linked to the deviation, with its outcome.

Offline is not a detail

Kitchens have thick walls, fridges that block signal and networks shared with the till. A log that requires connectivity loses exactly the peak-hour readings. A local queue that syncs automatically when the network returns is a requirement, not an extra.

Moving off paper

Run both logs for two weeks, no longer. Beyond that, paper becomes the excuse not to use the digital one and the team never forms the new habit.
